There was once, not too long ago, maybe even right now, a part of the city where all the bakers, chefs, barkeeps, baristas, sandwich makers and other assorted food romantics liked to gather.

And gather they did.
Gin fumes and flour dust plumped the air above them. Here conversation was like a table after the most decadent meal imaginable – crumbs of topics scattered everywhere, speculative juices and sauces spilled freely, the bones of subjects stripped clean.

And the conversation? Nothing business, nothing personal, only craft. Ritualistic craft. Ridiculous craft. Handed-down craft. Discovered craft. Nature herself, the supreme artisan, couldn’t explore in such detail the art of creation as could these long-into-the-night culinary artists.

Tales served hot and cold. The baker who always baked better when falling in or out of love and the baker’s colleagues who worked hard to prepare an atmosphere for permanent romance. The legend of the sandwich shaman who supposedly anoints – with pickle or radish no one is sure – a successor once every ten years. The cocktail maker who would roll one shoulder, then the other, very slightly, almost unnoticeably, before beginning to select ingredients. ‘Looseness is a flavor too’ they would say.

The oyster chef who, supposedly, spends salty nights standing on the shoreline, singing into the sea. Moonlit madness or an ancient shanty tribute, on one ever knew.
The astrology-obsessed sommelier casting birth charts for every wine. ‘Perfect Fish Pierre’, 88, who refuses to retire until he finds ultimate piscis. The game bird chef who spatchcocks endlessly in their sleep.
